ROASTEDEGGPLANTCAPONATA
Ingredients:
•1 large eggplant, diced •½ red onion, diced •½ redpepper,½greenpepper diced
•Salt &pepper to taste•2garlic cloves, diced• 1 tsp. capers
• 2Tbsp. LivelyOlive’sRoastedGarlic ExtraVirginOliveOil
•1Tbsp. black olives, diced•1½ cups soft goat cheese
•1Tbsp. LivelyOlive’sTraditional StyleBalsamicVinegar
• 1 tsp. LivelyOlive’sCabernet SauvignonRedWineVinegar
Directions: •Preheat oven to 350°F.
• Combine the eggplant, onion, redpepper inabowl, tosswith salt, pepper and the
GarlicOliveOil.
•Spread the eggplantmixture over a sheet of parchment paper ona large cookie
sheet. Roast ina 375° oven for 20-25minutes, or until tender.
•Meanwhile stir together thegarlic, capers, black olives, sugar, BalsamicVinegar
andCabernetWineVinegar inamed. pot, cook 20min. over lowheat to reduce the
mixture, stirringoccasionally.
•Combine and stir together bothmixtures. Refrigerate for at least 4hours.
•To serve, bring to room temperature and topwithdollops of soft goat cheese.
Servewith crackers or crostini; as anappetizer dip. Or use as a topping ongrilled
fish, chicken, onpastaor pizza. ENJOY!
