Ontario Butternut Squash with Maple Syrup...

medium butternut squash halved lengthwise and seeded
4
teaspoons butter, 4 teaspoons maple syrup (or brown sugar)
salt and pepper
1.
Place squash flesh side up.
2.
Place 1 teaspoon butter in the middle of each squash.
3.
Drizzle 1 teaspoon maple syrup on each squash.
4.
Season with salt and pepper.
5.
Put in oven with 40 minutes left in Duck time, until flesh is fork tender.
Roasted Ontario Potatoes...
1.
Slice potatoes without separating, using a big
spoon to rest potato in. This will prevent from slic-
ing all the way through.
2.
Drizzle olive oil over top of the potatoes or
for a real treat, duck fat, getting as much as you
can in between slices, then add a rub of your
choice sprinkled on top.
3.
Microwave for 12 minutes covered, on high.
4.
Put in oven when you have approximately 40
minutes left on the Duck clock.
5.
Let the potatoes rest for 5 minutes. Add butter,
sour cream and chives to finish off.
