Pairing
wine and cheese is an art that dates back to ancient times and has been called, “the purest and most
romantic link between humans and the earth”. Uniquely, every style of wine and cheese maintains its own flavour,
texture and other inherent characteristics. With so many exceptional new world options for both wine and cheese
the choices brought forth to the consumer can become rather confusing but thankfully, we have excellent, home
grown expertise right here in Escarpment country. The Cheese Gallery in Thornbury, is a cheese shop and tasting
bar offering extraordinary local and international cheeses. Georgian Hills Vineyards, located just up the road towards
the Beaver Valley, is quickly becoming established as a respected performer in the art of wine production.
Together, the combinations are delectable — classic and
ultimately pleasurable to the palate.
L'ermite
was the first cheese
made by the monks at Quebec’s
Saint Benoit Abbey in 1943. Its aroma
and flavour is grassy, herbal and mushroomy
with a hint of sweetness and earthiness. As it is
often served with pears for desserts, it's the
