The award winning Thunder Oak Extra Old Gouda from Thunder Bay and a Maple Smoked
Cheddar from Manitoba are recommended companions for Creemore’s winter brew,
urBock, a rich, full flavoured dark beer. The Gouda, aged for about 20 months,
offers a balanced sweet and sharp flavour that is reminiscent of pulled toffee.
The cheddar is aged for two years and is then naturally smoked with maple
wood chips. It has a buttery consistency and rich smoky flavour.
Hosting a beer and cheese party is one of the simplest
gatherings you can throw. Beer and cheese go
really well together. They have for centuries.
Both share a similar past and utilize time honoured traditions.
Good beer and good cheese are meant to be shared.
Creemore Springs Brewery teams up with Dags and Willow
to help you prepare.
Each beer style is matched with two types of cheese. We
recommend serving four to six types of cheese, providing an ounce
to an ounce and a half of each per guest. Serve approximately
three to four ounces of each beer style. Ideally, take the cheese
out of the refrigerator about an hour before you plan on serving it
and ensure every cheese has its own knife so flavours don’t get
mixed together.Add some condiments, crackers, plain bread, and
great beer and voilà – a truly delicious adventure awaits!
The Creemore Springs Traditional Pilsner imparts a flowery, spicy aroma balanced by
sweet rich malt flavours and a crisp bitter finish. It pairs nicely with Grey Owl or the
award winning Cheddar from Ontario – the new Lindsay Bandaged Cheddar.
Grey Owl is a soft and creamy pasteurized goat’s milk cheese from Quebec.
The white interior is contrasted by the black ash coating on the
outside, and it has a rich, lemony and piquant flavour.
Lindsay Bandaged Cheddar offers a rich and complex
flavour. Firm and crumbly in texture, it has notes of
blackberry and butterscotch with a sharp finish.

Creemore Springs Premium Lager is a unique and distinctive
tasting Lager with a delicious, textured, lightly nutty body.
Recommended cheeses are Niagara Gold or Ermite Blue.
Niagara Gold is a washed rind, cow’s milk cheese,
fashioned after recipes developed by the Trappist Monks of the
Loire Valley. This is a luscious cheese with nutty & milky overtones.
Ermite Blue is a milder cow's milk blue cheese from Quebec aged for 60 days.
Dryer in texture, Ermite displays notes of green peppercorn and raspberry jam.
