With thegraniteorderedandalreadyon itsway to fabrication,wewere ready tobegin
demolition.Wewanted tokeep theoldkitchen in tact foras longaspossible to limit the
“restaurantphase”. That’swhenyou’re forced toeatout,as thekitchen isno longer func-
tional.With some help fromour friendMireille, Haily and I didall thedemolition. The
first fewswingsof thesledgehammerwereecstaticas thehideouswhite floor tilesmashed
intopieces. The thrill quicklyworeoff asdemolitionprogressed into thenight. It tookal-
mostno time for thedust tocovereverysquare inchof thehouse,andhaulingconstruction
debrisbecameworkout.
Choosing thenew flooringwasoneof theeasiest decisionswemade.Wedrewour in-
spiration fromThe LivelyOlive indowntownCollingwood. Theyhaveagreat cork floor
that looks like thin strips,as if someonehadpeeledawinecorkand laid it flat.Whenwe
explainedwhat wewere looking for toChristine Buck at GeorgianDesignCenter in
Collingwood, she immediately tookus to their cork flooring section. It tookusall of five
minutes todecideon the flooring. Besidesaesthetics, thegreat thingabout cork is that it
is soft on the feet andprovidesexcellent insulation.
