what you need
...
• Fresh Bread (I used sourdough)
• Soft Goat Cheese
• Fresh Parsley
• Fresh Chives
• Heirloom Tomatoes
• Sea Salt
• Cracked Pepper
• Extra Virgin Olive Oil
what to do
...
1. Slice the bread thickly and toast or grill until it’s
crisp and brown.
2. Finely chop a small handful of parsley and
chives. Using a fork, mix the desired
amount into the soft goat cheese along
with some fresh, cracked pepper.
3. Thickly slice the tomatoes.
4. Spread a thick layer of the
herb and goat cheese spread
onto the pieces of toast,
layer the tomato slices on top.
5. Serve as open-faced
sandwiches with a garnish
of sea salt, a drizzle of
good olive oil, and freshly
cracked pepper.
I used pink peppercorns here.
